The Millery's products are made with freshly-milled flour, which means that the whole wheat berry is put through a grain mill and made into flour to be used in baked goods. Freshly-milled, unsifted flour retains the wheat's full nutritional value. Because freshly-milled flour is not shelf-stable, you cannot find products using it in the grocery stores (yet!). The Millery's mission is to provide access to freshly-milled products to all!
I am Abi Halls, and I am the Owner and Baker at The Millery! I am originally from Woodstock and still live here with my fiance and two cats. After graduating Georgia Tech with an Industrial and Systems Engineering Degree, I had more time on my hands than ever before. I decided to learn to mill my own grain and started baking bread and goodies for my loved ones. I had such a passion for making the bread; I just wanted to make more and more! From there, the rest is history, and The Millery was born.

Frequently Asked Questions
How long does the product last?
Most products using freshly-milled flour last 4-5 days at room temperature. Because we use the entire wheat berry, the natural oils cause the bread to spoil faster. Sliced breads preserve excellently in the freezer, and can go straight from freezer to toaster.
What if I am not ready to eat it right away?
We recommend freezing the product until you are ready to eat it! Just pull it out of the freezer and put on the counter for a few hours to allow it to come up to room temperature, and you are good to go! We love this option because it helps to reduce food waste.
What can I do with my stale bread?
If you feel like your bread has gone too stale to recover, there are some things you can make to reduce food waste! We love to make breadcrumbs, french toast, and bread pudding with our leftover bread.
